HARVEST : 100% manual

VINIFICATION : Careful destemming to preserve the aromas, then one week maceration, and 11 months ageing in stainless steel to preserve the crisp fruity notes. Unfiltered, no sulfite addition : natural wine. Estate bottled.

WHEN TO DRINK IT? Very crisp and expressive in the five first years, it will then be more shy and delicate but harmonious in the next five years.

TASTING NOTES : Expressive notes of cherries with a hint of pepper. Dense, crisp fruit in mouth, freshness and a nice tannic structure giving a good length.

WHAT TO DRINK IT WITH? Perfect for the light dishes based on tomato : home made pizza or lasagna etc. Its freshness will be good with your barbecues. Try it with a Camembert!

HOW TO SERVE IT? At 15°C. Better when decanted an hour. This wine is not filtered, a little cloudiness is normal.
