VINIFICATION : The Grapes are not crushed before the smooth pneumatic pressing. After the fermentation, the wine is bottles with an addition of sugar for the second fermentation. Then aged for over 36 months on the lees in bottles in order to develop a nice complexity and elegant bubbles.

WHEN TO DRINK IT? Will be great in the next 4 years.

TASTING NOTES : Expressive fruity aromas on the nose. Nice complexity. In mouth, very ripe, dry, fresh. The elegant bubbles permit to appreciate the nice fruity aromas. Nice depth and length.

PAIRING : Great as an aperitif of course. Dense and complex enough to be paired with some dishes as well, like oysters or sushis.

HOW TO SERVE IT : At 10°C.
